Australian Wild Prawns

Course overview

The term king prawns doesn't actually refer to the size of the prawn but rather refers to species, which means you can also find small, medium, and large Australian Wild King Prawns.

In their raw state, Wild King Prawns showcase a vibrant blue tail, transitioning to hues of pink and orange when cooked. Recognised as the classic "bucket of prawns" species, kings hit the sweet spot on the flavour spectrum.

By the end of this course, you'll be able to:

  • Identify the two main species of king prawns found in Australia, their ideal location and methods for catching.

  • Recognise the distinguishing features of king prawns.

  • Gain an understanding of the ideal culinary preparations for wild king prawns based on their texture and flavour profile.

  • Recognise the versatility of wild king prawns in various cooking methods.
